Uncle Bruce's Fresh Chilli Recipe
The key to perfect fresh chillis is to balance the heat and the flavour just so. Too much heat, and the piquant enjoyment can even become uncomfortable. Of course, everyone has their own idea of what constitutes hot, so experiment until you get it just right.
- 3 C green chillies, stalks removed
- 1 C red chillies, stalks removed
- 5 C ginger, peeled
- 4 garlic cloves, peeled
- 2 C basil, de-stemmed
- 1 C olive oil
- salt to taste
- Black pepper to taste
Pulse the ingredients in a food processor in order to keep the mixture chunky and textured. Place in a glass jar for storing and cover with olive oil. Lasts up to 3 weeks in fridge if well sealed and completely covered with olive oil. Freezes well.
